淀粉是由植物光合作用产生的葡萄糖所连接的两种大分子直链淀粉和支链淀粉组成的多糖。淀粉作为食品工业,用作增稠剂、保水剂、织构改善剂和分散剂。也广泛应用于制药工业,作为药用片剂的辅料、抗生素的发酵介质,和粘合剂在各个领域的工业应用。使用EMS粘度计测量淀粉动态粘度随温度变化的例子,该粘度计可以通过密封、灭菌和非接触的方式来测量淀粉的动态粘度。使用EMS粘度计,只需700μL的样品就可以测量各种淀粉溶液的粘度。

Procedure Application Note Temperature dependence of viscosity of starch IndustryOrganic ChemicalInstrumentViscometerMeasurement method:Electro Magnetically Spinning MethodStandards 1.Scope Starch is a polysaccharide composed of two kinds of macromolecules, amylose and amylopectin,which are linked by glucose produced by photosynthesis by plants. As a food industry, starch is used as a thickener, a water retention material, a texture improvingand dispersing agent. And it is used in the pharmaceutical industry as an excipient forpharmaceutical tablets, as a fermentation medium raw material for antibiotics, and as anadhesive for industrial applications in various fields. Example of measuring the temperature dependence of the dynamic viscosity of starches usingan EMS viscometer that can be measured by sealing, sterilization and non-contact were shownbelow. 2. Precautions None. 3. Post-measurement procedure The sample container and the sample are discarded appropriately. 4. Apparatus EMS Viscometer eControl Laptop PC 5. Measurement mode: Sequence modeMeasurement temperature:(i) Heating at 50 ℃for 5 minutes asPretreatment.(ii) Heating from 50 ℃ to 95℃(2℃ /min)(iii)Keep at 95 ℃ for 30 min(iv)Cooling from 95 ℃ to 50℃(2℃C / min)Motor rotation speed: 1,000 rpmMeasurement time: I (1 second)~IV(30 seconds)>Repeat count:1 time(Continuously measure the rise/ fall temperature process)Measurement interval: 0 second Waiting time for temperature stability : 0 minute 2) Place an aluminum spherical probe of p 4.7 mm and a sample of 700 pL in a container, coverwith a cap and packing, set the sample container in the EMS Viscometer, and click themeasurement button. 3) Measure another samples on the same condition after the measurement of the first sample iscompleted. 7. Example The viscosity measurement results about the temperature dependence, Amylograph, of thePotato starch, Corn starch, and Wheat starch were shown in Figure1. The temperature dependence of the viscosity was confirmed for all starches. We were able to measure the gelatinization / disintegration process of starches (to makeamylograph). For your information, it took about 90 minutes to measure the temperature dependence of theviscosity of one kind of starches, therefore 3 kinds of all starches could be measured withinabout 4 and half hours.
